Making these cookies for my family and relatives is a win-win situation for me. The kids love the colors while the adults love the taste that they would only grumble a bit with regards to the “sudden attack” of the rainbow. They’ll shut up once they have a bite of these cookies.

Ingredients
2 ½ Cups Gold Medal flour
1 teaspoon Clabber Girl baking soda
1 teaspoon Morton salt
1 Cup Crisco shortening
¾ Cup Domino sugar
¾ Cup Domino brown sugar
1 teaspoon McCormick vanilla extract
2 Eggland’s eggs
Americolor gel food coloring
1 Cup Trader Joe’s mini milk chocolate chips
Instructions:
Preheat oven to 350. Combine flour, baking soda, and salt in a bowl; set aside.
Beat shortening and sugars until combined and creamy. Add eggs and extract.
Add the dry ingredients and mix well.
Divide the dough into 6 equal sections and use 1 drop of gel food coloring for each section. Knead the color into the dough. {I use Americolor food color gel. I buy it at Hobby Lobby.}
Fold in chocolate chips (about 1 Tablespoon to each section). Use a 2 tablespoon cookie scoop to drop dough onto baking sheet. Bake at 350 for 8-10 minutes.

Quick Tip: You can of course use any cookie dough that you like. This recipe uses shortening and it makes the dough easy to work with (as you will be working it with your hands); it is almost like play doh. It is not as sticky as dough that uses butter.
