I told him I was going to make a side dish with bacon in it; somehow I forgot to mention cabbage is involved… He was really excited about the bacon – in his mind he was probably picturing a plate filled with crispy, fatty slices of bacon, but he was wrong about that one!
When he came home from work and realized it was cabbage, I could see it in his eyes that it wasn’t what he had expected at all! He didn’t want to upset me so he just didn’t say anything. Until he took his first bite, that is. That’s when he started asking about the cabbage dish and how I had managed to make it so incredibly delicious! And guess what he wanted to have again next week?
4 slices bacon, cut in 1″ pieces
2 lbs green cabbage, coarsely sliced
1 yellow onion, thinly sliced
1⁄2 teaspoon salt
1⁄2 cup water
Cook bacon in a large skillet, until browned.
Add the sliced cabbage, onion and salt (and beans, if using). Stir to combine everything nicely and to coat cabbage with bacon fat.
Add water and reduce heat to medium-low. Cover and cook for about 30 minutes, stirring occasionally, until cabbage is tender and lightly browned.
