Mexican Lasagna? Yeah, I know it sounds super weird. When I found the recipe online, I thought, “oh gosh, people have taken it way too far. This cannot be good.”
I could already picture it: a layer refried beans, then a layer of tomato sauce, a layer of sour cream and then a layer of pasta and cheese to bring it all together. But, I I knew it had to be strange and was still so intrigued over the recipe, so I gave it a look through. I perused it thoroughly and realized that it probably was not as bad as I thought it would be.
This Mexican lasagna had lots of flavors that I really loved. It was full of cheese, refried beans (although you could totally use black beans too, if you preferred that), ground beef (or ground turkey!), diced tomatoes in a yummy salsa, tortillas and so many other things like sour cream and guacamole. This dish really has a lot of flavors that I tend to love together so I decided to give it a try. Boy oh boy, was it delicious! It was like a taco, but in layers.
