When I was little, we used to visit the Dominican Republic every single year, no fail.  We would go as a mission trip to a little church that my dad had helped develop years prior, so every year we would head over and take them supplies, clothes and books.  As the time went by, the kids who we would bring supplies to grew up and began to hang out with us more.  We could no longer stay in the homes of church members because those kids were grown and required more space.

 

So one year, my dad looked up an all inclusive resort in Punta Cana.  It was a gorgeous hotel, full of luxuriously beautiful decorations and fountains and rooms.  The whole thing was positively gorgeous and really, did not compare to staying at anyone’s house.  We had tons of food to ourselves, the pool which was amazing and a beautiful room.  We were in heaven.  Our favorite thing about this stay was the all-inclusive FOOD! There was deliciousness everywhere you turned, from the snacks at the bar to the dinner hour.  Our favorite treat was a pineapple coconut cake that was out of this world, amazing! I have made this over and over again!

There is no direction for pineapple filling and cream cheese frosting. Can you give it. I would really like to make this cake don’t understand about filling and cream cheese no direction.

Recipe sounded good until the end where it became confusing without any direction on Pineapple filling and cream cheese frosting do you buy cream cheese frosting and add 1/4 cup of pineapple juice? what are we adding the crushed pineapple to for pineapple filling?
