Amazeballs! These Toasted Almond Ice Cream Balls Taste So Good!

My favorite dessert as a kid was this ice cream cake that Mom always bought for us from a store near our school. At the end of the week, if we behaved well in school, we would pass by that store and Mom would order a tub for us as a reward. It’s a soft moist cake covered with chocolate ganache and filled with vanilla ice cream inside. It was sprinkled with pine nuts, giving the rich dessert that crunchy, nutty taste that complemented the sweetness. They don’t make that flavor anymore, but there are so many new flavors to choose from nowadays that it was hardly missed.

 

I tried to recreate that childhood treat a few nights ago, but I failed. I ended up assembling a dish of banana split instead, which wasn’t actually half bad. I had my vanilla ice cream in there with two slices of bananas. I drowned them in hot fudge syrup while I sprinkled nuts on top. Perfect. Plus, it’s homemade. I had all the ingredients in my pantry. There are a lot of desserts you can create using the ice cream that’s on your fridge. You don’t need to eat out just to eat good dessert.
