A Mom-Approved Biscuits and Gravy Casserole Recipe

Although I always say I’m a southern Florida girl, I was actually born in Canton, OH. My dad was in residency school and my parents had gotten married just six months prior. The days were long over there and my dad spent hours upon hours in hospitals doing rounds and even spending nights there. My mom got really lonely and soon after, she found out she was pregnant. She always tells me it was such a joy because she was alone and now she had someone to be with while my dad was away for hours and even days at a time. She really enjoyed her pregnancy and especially her cravings. You won’t even imagine what her number one craving was though…

 

She constantly wanted a biscuits and gravy casserole. Yep, you read that right. It was so strange to me. Why would you want a plate of mush? It really does crack me up! Anyway, apparently my mom would go to restaurant after restaurant trying this same dish. She would actually grade restaurants and their dishes and what they were like. She would wait for my grandma to come in to town and together, they’d set out on any given day to just try all the biscuit and gravy dishes in the city. I can imagine it was quite a site to behold, but boy did they enjoy it. They still laugh and talk about it today!
