Growing up, we lived in the big city. Always nearby to grocery store, the mall, a library, etc. We did not have to do any labor to get our food, and could even order stuff online.
Fast forward a couple of years and my dad took us to spend some time on my uncle’s farm. Suddenly, if we wanted breakfast, we had to go outside and pick the eggs ourselves that we were planning to cook. If we wanted a salad, we had to go pick out the veggies.
If we wanted clothes, we had to learn to sew and make it ourselves. It showed us what it is like to live on a farm. Now fast forward many years and here I am, remembering those days and the yummy foods we made.
Now, don’t think that just because we were eating wholesome food, it was healthy. No way, we loaded up on butter and cheese and breads. Mmm, so delicious.
I remembered this breakfast casserole that my uncle’s family used to make and knew that I had to share it with all my friends. It is so worth it, even if you do not collect the eggs yourself or pick your fresh veggies.
