I can remember the first time I ever saw crawfish. It was on a Chinese buffet, of all places. I picked the red, beady-eyed little fish up with the tongs and immediately dropped the thing back into the pan.
There was no way I was going to even put that crazy looking fish on my plate let alone eat it! I mean, the thing was LOOKING at me for goodness sake! I thought that would be my last runin with crawfish for the rest of my life.
However, my dear neighbor and friend Sally is from Louisiana… Sally has been trying to get me to eat crawfish for quite some time now and I told her that if she ever brings one of those ugly little things over to my house I’m pushy her and her crawfish into the pool. Sally never listens.
She showed up the other day with this gigantic pan of what appeared to be a very cheesy casserole. It smelled delicious. I told Sally that it was so very thoughtful of her to think of me in this way as I love food!
As I sat down to sample sally’s casserole I spotted the crawfish. What the what! Sally insisted that I at least try the casserole and since it is the holidays I thought why not just appease her. I took a bite and was in food heaven.
I couldn’t believe what I had been missing all of these years! Sure, the crawfish are ugly as sin but boy do they ever taste good. Make this casserole, you won’t regret it 🙂
