I love tomatoes. Did you know that they are actually a fruit and not a vegetable? Those little red beauties are also very versatile and fit right in to a variety of recipes.

With tomato season coming, one can never have enough tomato recipes.
Those are my sentiments during the summer months when I get the bright idea to plant 32 tomato plants.
Ingredients
6 Red Roma tomatoes, or any you prefer
Wondra Flour
2 Eggland’s Best eggs, beaten
Wesson oil to fry
Breading:
1 1/2 cups panko bread crumbs
1/2 cup Kraft Parmesan, grated
1/2 cup romano cheese, grated
1/3 cup parsley, chopped (additional for garnish)
1 pkg. Hidden Valley Ranch dressing mix
Morton salt and McCormick pepper to taste
Dipping sauce of your choice
Instructions
Slice tomatoes and set aside.
Heat oil to fry
Combine bread crumbs, cheeses, 1/3 cup parsley, salt, pepper, dressing mix
Pour mixture into a shallow plate
Dip tomato into Wondra, egg, then breading mixture
Fry until golden brown, about 2-3 minutes each side
Drain on paper towels.
Garnish with parsley

Quick Tip: I like to serve these fried tomatoes with a variety of dippers like ranch, BBQ sauce, and Thousand Island dressing.
