Sloppy Janet’s Corkscrew Pasta Casserole!

It’s amazing how much this Sloppy Joe Casserole tastes like the sandwich. I mean, it almost messes with your mind a little bit because your taste buds are telling you that you are eating a traditional Sloppy Joe sandwich but your eyes are telling you that it’s a casserole.

Sloppy Joe flavor combined with veggie pasta wholesomeness; can you say YUM!?

 

Buying bulk canned goods have been my saving grace a time or two! I don’t know where I’d be without them, especially since they don’t ever really expire. who cares what the date on the stupid can says, they have to put that there.

 

 

Ingredients

1 lb. lean ground beef
1/2 box uncooked corkscrew or penne pasta
1 bag frozen mixed vegetables
1 white onion, chopped
1 15-oz. can tomato sauce
1 6-oz. can tomato paste
2 envelopes Sloppy Joe mix
16-oz. small curd cottage cheese
2 cups shredded Colby & Montery Jack Cheese
Dried parsley flakes
Dried oregano

 

 

 

Instructions

Preheat oven to 350 degrees.

Cook pasta according to package directions. Cook vegetables according to package directions.

Meanwhile, cook beef and onion in a large skillet over medium heat until the meat is no longer pink. Add the tomato sauce, tomato paste, Sloppy Joe mixes, and sprinkle with parsley and oregano. Reduce heat to low and simmer for 5 minutes.

Drain pasta and add to a large bowl. Drain vegetables and add to the pasta. Add the beef mixture; stir to combine all ingredients.

Spoon half the beef-pasta mixture into a greased 9×13 baking dish. Top with cottage cheese, spreading evenly. Sprinkle with half (1 cup) of the shredded cheese. Top with the remaining beef-pasta mixture.

Cover with foil and bake at 350 degrees for 25 minutes. Uncover, sprinkle with the remaining 1 cup of shredded cheese, and continue baking for another 5-10 minutes or until cheese is melted.
