Casseroles come in many shapes and forms but this one is definitely one of my favorites.
Check out what my pals over at Group Recipes had to say about this:
This sounds yummy. Not sure if my onion hating daughter would approve, but she’s picky, the rest of us aren’t. Gets my vote!
My daughter hates onions, too. after I made this casserole and she tried it, she still hates onions. LOL However, my husband and I loved this country onion casserole.
Ingredients
2 large Bermuda onions, sliced and separated into rings
2 tablespoons of Land O Lakes butter
1/2 pound of Kraft swiss cheese, grated
1/4 teaspoon of black pepper
1/2 cup of TruMoo milk
1 can of Campbell’s cream of chicken soup
1 teaspoon of La Choy soy sauce
8 slices of French bread, buttered
Instructions
Simmer onions in butter until tender. Place in a casserole dish.
Top this with the grated Swiss cheese and black pepper.
Heat the soup and milk until well blended then add the soy sauce
and stir well.
Pour this mixture over the onions and cheese in the casserole dish. Stir lightly.
Over lap the bread slices on the top of the casserole. Bake at 350 degrees for a total of 30 minutes.
After the casserole has baked for about 15 minutes, push the bread down into the cheese and onions and continue baking for the remaining 15 minutes.
You can use any type of onions that you like and also lots more than are called for.

Thank you to Group Recipes for this awesome recipe.
Very nicely done, Jessica. I can only imagine what it would taste like with homemade cream of chicken soup. Have you tried adding some sweet peppers, or zucchinis?
Thank you, Richard! I haven’t tried it with peppers or zucchini but that sounds fabulous!
