Clap Your Claws For This Country Onion Casserole!

This casserole is one of a kind.

I was in the mood for something a little different the other day. I make out a monthly meal plan at the beginning of every new month and it usually contains the same set of meals. Well, I grew weary of the monotony so I went out on a limb and made this country onion casserole.

Now, my kids hate onions so they barely touched the stuff but my husband and I are pretty partial to the stinky little things. We loved this casserole. We had a ton left since the kids weren’t eating it so we took some over to his grandparent’s house and they chowed it down like nobody’s business.

This casserole is super easy to make and contains a lot of cheese. I like cheese. No, wait, let me rephrase that, I LOVE cheese. So, the combination of onions, cheese, and spices really floated my boat.

I really didn’t even need an entree to go along with this casserole because it tasted so dang good I ate an entire plateful of the stuff. You just wait and see. You’ll be smelling like onions for days, too 🙂

Very nicely done, Jessica. I can only imagine what it would taste like with homemade cream of chicken soup. Have you tried adding some sweet peppers, or zucchinis?
