I am always looking for new casseroles to make for my family. They often complain that I make the same casserole dishes all the time. But hey, who fix it if it ain’t broken, right?
Wrong! Cooking the same casseroles can get a bit boring. So, that’s why I’m so grateful for this cheesy zucchini bake because it is anything but boring.
This recipe also has roasted corn and red peppers in it. Yum! I love how many colorful veggies adorn this casserole. it’s totally tasty and pretty to look at 🙂

Quick Tip: Allow this bake to sit under the broiler for 2 or 3 minutes to blister the top a bit. It’s yummy!
