#3 Beef And Corn Biscuit Casserole
You could probably open your fridge and find all the ingredients you need to make this family favorite. That’s why I love it so much! If I come to a day where I’m thinking what on earth am I going to make tonight, this one is always possible.
I like things during the weekday that are fast, fun, and deliver no complaints from the peanut gallery. Ask them, they’ll tell you my famous line is, “I am NOT a short order cook, I’m mom.” Being able to dish something hearty and delicious onto their plates and get just yums and smiles in return ends my day perfectly.
Ingredients
2 ¼ cups Original Bisquick™ mix
2/3 cup TruMoo milk
2 tablespoons sliced pimiento-stuffed green olives
1 lb lean (at least 80%) ground beef ï
1 medium onion, chopped (1/2 cup)
1 ½ teaspoons minced garlic (from 4.5-oz jar)
1 can (14.5 oz) Libby diced tomatoes with roasted garlic and onion, undrained
1 can (14.75 oz) Libby cream-style corn, undrained
1 teaspoon McCormick chili powder
½ cup Kraft shredded Mexican cheese blend or Cheddar cheese
Instructions
Heat oven to 400°F. In large bowl, stir Bisquick mix, milk and olives until soft dough forms.
2 In 12-inch skillet, cook beef, onion and garlic over medium heat 8 to 10 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Stir in tomatoes, corn and chili powder. Heat to boiling. Pour in ungreased 11×7-inch (2-quart) glass baking dish. Drop biscuit dough by tablespoonfuls over mixture.
3 Bake 20 minutes. Sprinkle cheese over biscuits; bake 5 to 10 minutes longer or until biscuits are lightly browned and cheese is melted.

Quick Tip: You can use plain diced tomatoes and add a bit more garlic if that’s what’s handy!

I make this all the time, but spice it up just a tad. I use 2 cans of Rotel (original) tomatoes with green chiles, and add a couple of Hot Italian Sausages (removed from their casings) in with the plain hamburger (instead of ground turkey). It is a wonderful recipe and I can use the leftovers for lunch for my mom (94) and me through the rest of the week.

This isn’t the recipe in the picture…. What else has been done to it. Looks like cheese and in the sandwiches and then cheese on top of them and toasted??

I can find the recipe, but it looks like the buns or biscuits are cooked on top with cheese on them, and there is no mention of it other than adding the meat mix to the buns. I want what looks like in the picture.
Lots of good looking recipes but a poorly designed website you have to click through and read everything several times to find the one you want. Not like most where you click the picture and get the recipe.

I make Unstuffed Cabbage Rolls all the time. If in a hurry I use a Pressure Cooker. Made this & a few others when my son was so I’ll with cancer. I still make them but not as much . They are very warming on a cold winter day or in fact any day.
again.. I am supposed to wait.. not a chance. So sick of the computer BULL… nothing is easy anymore..
