St. Patrick’s Day Or Not, You’re Going To Want To Make This For Dinner!
My aunt and I were hanging out the other day in my living room discussing life and such and we got on the topic of easy dinner ideas. Now, let me clarify, my aunt is an amazing cook and she certainly doesn’t need to dumb down her recipes in the least. The woman could probably make a rack of lamb 1 hour before feeding a dinner party of 20.
However, we all need our quick and simple meals from time to time. She shared with me an excellent recipe for a quick and easy Irish meal. This meal is great because it is basically an entire dinner that cooks in one pot. Genius!
Luckily, everyone in my house enjoys corned beef, carrots, and red potatoes. My kids don’t care much for cabbage, but my husband and I do so it’s all good, homegirl.
