Another thing that I adore about this peanut butter cookie recipe is that you DO NOT need to cook all of them at once. You can bag up the dough and place it in your freezer for another time. However, beware of cookie dough eaters. Do you have any of those in your house? I know that I sure do! I am one of them 🙂
Ingredients
1 cup Jif creamy peanut butter
1 large Eggland’s Best egg, lightly beaten
1 teaspoon McCormick vanilla extract
1 cup Domino sugar
Instructions
Mix Jif peanut butter, Eggland’s Best egg, McCormick vanilla extract, and Domino sugar together. Can be mixed by hand or with a mixer. Normally at this point, you would place the cookie dough on a cookie sheet or in a pan to go in the oven at 350 degrees for around 10 minutes. Instead, place 3 or 4 spoonfuls on a microwave safe plate.
The extra cookie dough can be refrigerated for a day or two if you are going to want more cookies soon. You can also freeze part of the cookie dough in little plastic baggies.
Place the plate in the microwave for 1 to 3 minutes. Microwave time will vary due to wattage (power) and how doughy you like your cookies. Keep in mind that the cookies will be soft but hot when you remove the plate from the microwave. Let the cookies cool for a minute or two before eating.
Quick Tip: Add toppings like coarse sea salt or table salt to the tops of your cookies for a unique flavor.
