Lasagna is one of my favorite lunches/dinners. Want to know why? Its all in one dish! There is nothing better than having your carbs, meats, and CHEESE all in one dish.
The only annoying part is that lasagna is just so complicated to make. You have to boil those thick noodles, pray to God they don’t fall apart, then layer it with all the meat and cheeses and such.
This casserole makes preparing a lasagna even easier and better. It’s one skillet, and enough for my husband and I with leftovers for tomorrow. It’s perfect for me when I want to enjoy a quick lunch between work sessions.
I want to have a yummy and filling lunch and it will be just that. This is supposed to be 6 servings, but it’s more like 3 around here…

Quick Tip: If you prefer not to use those thick noodles, just use rigatoni or penne (as large as you can find).
