We have to have Mexican food once a week in our home, but I was getting tired of the typical taco Tuesday. I chose to try this spectacularly cheesy option that combines pasta and all the flavors of enchiladas – yes! I’ve actually learned to make enchiladas from my sister who was married to a guy from Mexico City so I know the flavors needed to keep this mostly authentic.
I had to shoo everyone out of the kitchen because they kept taking bites of the filling. I was like, “Come on guys! We’ll have nothing left for the meal!” This was a first, and a guarantee that the meal was going to be a hit. Taco Tuesday will never be the same.
