Oh, You’re Fancy Eh? Well Then You’ll Love This Take On a Classic Egg Dish

 

So it was a usual Sunday morning. I usually sleep in, but I decided to sneak out of bed to make a special breakfast for my man. Of course, the moment I set food to carpet, he woke up.

So I did what any smart wife would do, and I said to my groggy guy, “Come help me make breakfast!” Begrudgingly he did, (he’s such a great guy!) I will say when he heard what it was going to be he was quite excited.

We both love Eggs Benedict and this casserole didn’t disappoint! I had all those flavors you’re craving, and was far easier to throw together. It was a chance for us to enjoy one another’s company before the kids woke up – and I am so thankful for that!

 

Ingredients

 

1 can (16.3 oz) Pillsbury™ Grands!™ Homestyle refrigerated biscuits southern style

8 oz thinly sliced Canadian bacon, chopped

8 Eggland’s Best eggs

2 cups TruMoo milk

1 package Hollandaise sauce mix (plus ingredients to make sauce)

Chopped fresh chives, if desired

 

 

Instructions:

Heat oven to 350°F. Spray 13×9-inch (3-quart) glass baking dish or 3-quart casserole with cooking spray.

Separate 1 can (16.3 oz) Pillsbury™ Grands! Homestyle refrigerated biscuits southern style into 8 biscuits. Cut each biscuit into 8 pieces; place in baking dish. Add 8 oz thinly sliced Canadian bacon, chopped; mix gently with biscuit pieces.

Beat 8 eggs and 2 cups milk with whisk until well blended. Pour over biscuit mixture.

Bake 30-40 minutes or until biscuits are puffed and knife inserted in center comes out clean. Remove from oven.

Make 1 package hollandaise sauce mix as directed on package.

To serve, cut casserole into squares. Top each serving with hollandaise sauce; garnish with chopped fresh chives.

Quick Tip: It’s okay to substitute ham cubes for Canadian bacon if that’s what’s available.
