Every time I order Eggs Benedict I feel so fancy. I love the way it looks, all layered and drizzled with Hollandaise Sauce, and usually the restaurant tops it with a sprig of something green for flair. It is a very pretty egg dish, but do you know what I love even more?
The taste of course! This is one of those dishes I’ve been wanting to try at home for a long time, but it took me a while to build up enough courage. This dish captures all that flavor that this delectable breakfast option does, but makes it simple especially for a crowd!
If you’ve ever tried to make Eggs Benedict for a group, you know it’s not easy. I have to also add, my kids happily ate it this way, and my husband said, “Wow! I didn’t think it’d be this good.” I’ll take the compliment!

Quick Tip: Eggs of any kind are always best complemented with fruit, I used watermelon balls to stick with the “fancy” theme.
