I’ve been on a bit of a lemon kick lately, but it is just the perfect flavor for when you want something fresh and tasty. I’d done lemon bars, lemon cupcakes, lemon cake and so it only seemed right to throw in a Lemon Meringue Pie. This is one of my husband’s favorites from his childhood so I had to be very careful to make it just right. He said this recipe was just like his grandmothers – score!

 

I always thought meringue was very tricky and hard to get right, so I was nervous to try it, but following this recipe I got it right the first time! It had the perfect consistency with those lightly browned waves on top. I was very proud of myself and of course, took lots of pictures.
