A Delightfully Fudgy Treat Made with Zucchini? How Can You Not Try?

I’ve always loved my mom’s zucchini bread, it always amazed me that it could be so sweet and delicious made from a summer vegetable. Now, anything with chocolate is just better in my book so I wasn’t afraid at all to try this Chocolate Zucchini Cake. Not only did it look marvelous, the recipe seemed easy as pie… but it was cake so I have no idea where I was going with this. Just, yum!

 

Back to the cake! I love bundts because they just look a bit more exquisite than other cake styles, and they seem to pack a lot of moisture inside. I knew that the zucchini would make this one extra soft and gooey which is always welcome when it comes to chocolate. I couldn’t wait to make it and eat it up! If you have tons of summer zucchini from the garden this is where some of it can go.
