Side dish or dessert? I’ll tell you what, it’s both down South. Especially this recipe topped with a sweet pecan crumble.
The sweet potato is buttery and delicious with the perfect consistency. Surprisingly, this has also become the favorite dish of a family member, who used to avoid sweet potatoes like crazy! Once she had a taste of this, she was so excited that she actually asked for the recipe.
I’ve had the sweet potatoes with marshmallow on top, and it’s okay. To be fair I’ve never been much a fan of the sticky addition, but I could eat pecans by the handful. This recipe gives the option for both so you choose – one, the other or both. That way you’ll have just what makes you happiest and that’s what life is all about!

Quick Tip: Sweet potatoes cook up fast in the microwave! Just scrub them and pop them in there for a couple minutes at a time until soft.
