A Crock Pot Of Mexican Inspired Heaven! Yum-O!

It’s raining here in Texas.  It’s surprising given that it’s summer and normally the rain tends to stop here in the June, July, and August months.  But when I realized it was going to rain, I knew I needed to find a good soup recipe to cook in my crock pot today.  I wanted to snuggle up and listen to the rain with a hot bowl of soup.

 

I came across this recipe, and conveniently, I had all the ingredients.  (Isn’t that the best?  Finding you have all the ingredients to a last minute recipe?) I tossed them in the crock pot this morning and at the end of the day, we enjoyed slurping this delicious soup!  Perfectly warm, fantastically soupy, and flavored just right.  This will be our family favorite for sure!

Quick Tip: This recipe freezes really well, so if you double the recipe you can store it in Ziploc containers for later.  Just toss the frozen soup in the crock pot to heat up the second time.
