My family absolutely loves this recipe. The grits are perfect for the kids, who love creamy things like mac and cheese. And yet, it’s such a grown meal, that it’s a treat for my husband and I as well.
When I made this recipe last, my kids gobbled it up and asked for seconds! I was in shock and so excited that I had found a recipe that I too had enjoyed when I was their age. So grateful for a mom who exposed me to fun flavors like this and being inspired to share it! I know your family will love it too.
Ingredients
- ½ lb catfish
- 2 tsp ghee
- 1½ tbsp Emeril’s Essence Creole Seasoning
- Grits:
- 1 cup grits (not instant)
- 2 cups water
- 1¼ cup almond milk
- 1 tbsp ghee
- 1 tsp salt
- ¼ cup cheese (optional)
Instructions:
Catfish:
Season generously with Emeril’s seasoning and set aside.
Add ghee to a large skillet (medium-high heat) until it melts completely.
Add fish and pan sear a few minutes each side.
Be careful not to burn the fish.
Grits:
Bring water, milk & salt to a boil in a medium saucepan.
Stir in grits, return to a boil.
Cover & simmer for about 25 to 30 min.
Add more almond milk if needed.
Stir in cheese and melt before serving if using.
