Summer is the official picnic time but who says you can’t have a picnic any time of year? The main thing is that you can’t have a picnic cookout without having a variety of salads to choose from. That’s why I love this cucumber-bean-avocado-tomato salad so much. It has a little bit of everything in it!
I went to the Farmer’s Market to gather most of my ingredients to make this crisp and crunchy salad. Some of the veggies I had growing in my own garden. Everything tastes better when you’ve grown it yourself, right? Right! My family enjoyed this summer concoction so much, even my kids. It combines just the right amount of crunch with savory flavors that compliment one another. You’re going to love it!
