I know a lot of people who have their doubts about cauliflower! I think it’s because they’ve only had them steamed and not with the right seasonings. This recipe will give you such a delicious dish that everyone who has a bite will immediately turn into a cauliflower lover!

Ingredients
1 lb (1 head) cauliflower florets
4 oz shredded sharp cheddar cheese, divided, (extra to sprinkle on top, as desired)
4 oz NC Red Heifer Cheddar Cheese, divided (from my weekly Backyard Produce basket)!
4 oz cream cheese, softened
2 tablespoons heavy cream
1/2 small sweet onions, chopped
3 sliced bacon, cooked crispy and crumbled
1/4 tsp garlic powder
Salt & pepper to taste
Instructions:
Preheat oven to 350 degrees. Spray a 2-3 quart casserole dish with cooking spray.
Steam cauliflower florets until tender.
Over low-medium heat cream together the cheeses, cream cheese, and heavy cream. Stir in chopped onions, crumbled bacon, and garlic powder. Set aside.
Drain any liquid from steamed cauliflower, add to cheese mixture and combine. Mash with a potato masher. Season to taste.
Pour into casserole dish and top with shredded sharp cheddar cheese. Cover with foil and bake for 25 minutes. Then remove foil and continue to bake until cheese is brown and bubbly!
