A One Dish Wonder for the Rice Lover

My favorite weeknight meal – I wouldn’t give this up for the world!

If you lean more towards rice than potatoes in your cooking, then this sausage and rice casserole is the one for you! Celery, white rice, and sweet or hot sausage make up the bulk of this dish for a filling side, main meal, or pot-luck pleaser. This dish comes with a little kick – but feel free to leave out the red pepper flakes and use mild sausage to cool it down big time.

If you want to make this right now and you don’t happen to have any sausage in the fridge, ground beef will work great as well! It’s the simple ingredients that make this an easy prep meal, including cream of celery soup and canned broth.

This recipe makes a medium sized casserole and is ready in a little over an hour, making it perfect for a belly-filling family dinner. And if you ask me, the leftover might be even better the next day!
