Don’t let the extremely simple preparation fool you – this soup is so tasty! You can easily alter it a little by using different veggies, or switching the Italian seasoning to something else you really like.
Ingredients

4 chicken sausage links, sliced

1 onion, chopped

2 carrots, peeled and chopped

2 celery ribs, chopped

4 cups low sodium chicken broth

1/2 tsp Italian seasoning

1/2 tsp salt

1/2 tsp black pepper

20 oz can diced tomatoes with Italian seasoning

2 cups mushrooms, sliced

4 cups spinach
-
10 oz. package gnocchi
Instructions:
Add all the ingredients except the spinach and gnocchi to a slow cooker and cook on low for 6 hours.
During the last hour of cooking add the spinach and gnocchi.
Serve with fresh parsley and Parmesan cheese.
Quick Tip: If you aren’t a fan of chicken sausage, use regular Italian sausage (sweet or spicy) to fit your preference.
