I’ve made this soup for 45 years! I just don’t put potatoes in (watching the diet). I’ve also found that there is less and less meat on the hocks, for some reason. I still make the soup with them (for the smokey flavor) and pick off the meat, but at the very end I cube a ham steak and add that. When I make it for myself (not the whole family), I don’t use any meat-just vegetarian style!
