Today Is a Great Day For This Yummy Meal!

I still remember the day that my mother gave me her old slow cooker. I just looked at her, and it, like she was nuts. I thought that slow cooked meals were only for old people at that time. Granted, I was in my early twenties. My idea of a good meal was going through the drive-thru after work and sitting on the floor of my apartment eating it. That, or ordering delivery from my favorite take-out place. I didn’t respect quality food then.

Only when I got older and started having kids of my own did I fully understand the importance of slow cookers in everyone’s kitchen. There is just so much that can be done in there. Sure, it takes longer, but it can cook while you continue on with your busy day!

This chicken and stuffing casserole from The Seasoned Mom is one of the first things that my mom taught me how to cook. It was so simple, and the flavor was one that I couldn’t get enough of. We still eat it at least once a month, even in the summer!
