There is really something magical with stews and soups. It’s not just the warmth it brings us whenever we eat them, there’s something else in there that you just can’t explain. When I was a kid, the best way to make me feel better was to serve me soup or stew. Sure, desserts did their magic, but they made me happy, not made me feel at home. I think that’s the role of the stew or the soup. It just reminds you of your childhood and the care of your parents when you were little. Correct me if I’m wrong, but that’s how I see it.

I cherished every meal my Mom made for my brother and I. I knew that she put everything in the food she cooked, and that’s incomparable. So as one of the recipients of those food, I always remembered to appreciate them.

One of the dishes I couldn’t forget was my Mom’s vegetable stew. It has potatoes, beans, cabbage, kale, and even pumpkin in there. The stew tasted so good that even my picky brother didn’t mind that it was made from vegetables.

This recipe that I’m about to share with you reminded me of my Mom’s stew. This recipe from The Kitchn is called kale and cannellini beans stew. And I am pretty sure you’re going to love this.
