Cousin Herby’s Emergency Sweet Potato Soup With Walnut Pesto

I was a bit sick this weekend because of the weather. Usually, I thrive when it’s cold, but I just came from a vacation where it’s quite hot so when I came back and felt the cold, my body couldn’t take it. So I was being spoiled at home by my boyfriend. He made sure that I wouldn’t get up even for the simplest things. He also cooked a lot of different soups for me because I really couldn’t take anything solid. However, he was called for work on Sunday so he had to leave me. He didn’t want to, but I threatened him out of the house. By lunch time, I had a visitor. He sent one of our friends so she could look after me. Her name’s Herby.

Herby took care of me the whole day. She was also like one of those guards that didn’t want to let me out of her sights. She reported to the boyfriend every now and then! Herby’s my saviour though because she made me the most delicious soup she called her emergency sweet potato soup. It has pesto and walnuts (And I love pesto so much!) and so warm that I felt really better right after. I fell asleep just as Herby removed the bowl of soup off my hands. When I woke up, the boyfriend was back and he handed me a note which contained Herby’s recipe. It was actually a link to the site where she got it. I’m sharing the recipe here with you in a while.

Quick Tip: The pesto can be made ahead and refrigerated, but it’s simple enough to put together while the soup is simmering.
