A Simple Country Meal Melds Together in the Perfect Casserole Combination

Serve up this pork casserole with a side of fresh applesauce and watch your family go crazy for it! Who doesn’t love pork chops and potatoes? Cook part of this dish in the microwave to start while browning the boneless chops, then place them on top and bake.

It’s so easy but so delicious it will blow your mind! As soon as I had tried this recipe for the first time, I knew it was one of those that were going to be included in our dinner rotation permanently! This recipe reminds me very much of ham and scalloped potatoes and I knew everyone in the family would love it.

The crispy fried pork went well with the potatoes, and I made half with onion and half without for my picky eaters. Just stick a toothpick in one side so you know which has onion! One of my favorite ways to serve these is with steamed veggies. It’s a great choice for those busy days when you don’t have the time to prepare the potatoes.

Quick Tip: If you don’t have a cast iron pan, I implore you to find one! They only get better as they age and I couldn’t imagine cooking these chops in anything else.
