Breakfast casseroles are my breakfast favorites lately. Sometimes I just get tired of the same old things for breakfast that I want something different to wake up to in the morning so I will have that extra bout of energy that I need. My weekday breakfasts are composed of cereals, breads, eggs, sausages, jams, and peanut butter, and while they’re my favorites, I get tired of them too.
This casserole was suggested to me by my boyfriend’s brother. He told me that he and his wife also eat the same things for breakfast because they really don’t have time to experiment most especially in the morning. One morning however, she wasn’t in the best of moods because of a bad day at work the previous day.
She just tried to just dump everything they have for breakfast in a baking pan, sprinkle cheese on them, and put them inside the oven. It came out as a slightly burnt casserole that tasted really good; a mishmash of all their favorite things. A couple of weeks later, when his wife was finally in a better mood, she was able to modify the recipe and they always have it at least once a week. It’s another experiment gone right!
