It was that time of the year again. My hardworking husband was going to be working two jobs. He had his regular cushy desk job that paid the bills, but he is the kind of guy that likes to get out and get his hands dirty. That’s when he goes and helps our neighbor… who happens to be a farmer. There is so much to be done, he hires on extra help at certain times of the year to make sure that he doesn’t fall too far behind. I miss my husband because he is gone all the time, but he loves it, so I’m not going to stop him.
I know that he burns through a lot of energy when he is working 12 to 16 hour days, so I always try to make sure to send him off with a hearty breakfast. Sometimes, I know that I’m going to be busy too, so that’s when I make up a breakfast casserole like this one from Group Recipes.
All I have to do is whip this together the night before. Then, I get up before he does in the morning and put it in the oven. By the time he gets showered up and hits the kitchen, it’s coming out of the oven. It works perfectly!
