One of my best friends invited me to go with her to an event recently, which I was terrified of doing. I never go anywhere anymore it seems. My job is at home with my kids, and when I leave, I feel so out of place. Now that they are getting a little bit older though, I figured it was time to try and explore adulthood again. It wasn’t all that long ago that I was very involved in the social scene, and I kind of missed it. I reluctantly agreed to go with her, and boy am I glad that I did! We had a blast.
The event was a simple dinner at one of her very good friends house, just for the ladies. It was a lady’s night in if you will. It was so calm and relaxing. It was the best time out that I had enjoyed in a long time. Even more enjoyable was the dinner that was served. Meatball stuffed shells, just like this recipe from Julie’s Eats & Treats.
A casserole that I didn’t have to make for once was part of the appeal, but the flavor was incredible too. I was sure to get a copy of the hostess’ recipe before we left that night. I was making this for my family, that I actually missed a little bit.

Quick Tip: Make your own meatballs for a fresher tasting casserole.
