Every time I think that I have made every casserole known to mankind I find a new one that is amazing! I think by now you should all know that I love my casseroles. They are super convenient. I get to prepare most of them the night before and then pop them in the oven when I get home with the kids after school and their activities. Put it in the oven and get settled in.
I had a craving for Mexican style food, but nothing sounded that good. So, I began my search. I didn’t make it very far because my friend Cathy called me to talk about the dealings of the day. She’s one of those people that always has the good stories and the details to go with them! Pretty funny most of the time too.
Well, I was talking to Cathy and we got on the subject of food and dinner. She told me that she knew exactly what I needed to make. She said that she was the Queen of the casseroles and had written down more than I had made. She told me to try this hot tamale pie casserole. Boy am I glad she called and told me about this recipe because it is amazing!
