It was my littlest’s birthday and she was turning 9. I figured she was old enough to pick what she wanted to have for her birthday. She settled on her birthday meal and what she wanted to do for her birthday. She wanted to have a few friends over and have a sleepover. I agreed to her having 5 friends over. I must be nuts! It’s her birthday so it’s special.
But then I asked her what kind of cake she wanted. She thought about it for a second. I was sure that she was going to want a chocolate cake, which is her favorite. Instead, she told me that she wanted to have a an ice cream cake! And not just any ice cream cake, but she wanted me to make it too.
Now I have made many things in life, food wise. but I had never made an ice cream cake before. I just assumed that it would be too hard to make. So, on the search I went. I found so many recipes, but this one walked me through it layer by layer and was so easy to make. The ice cream cake turned out wonderful and all of her little friends just loved it!
