Aunt Judy’s Scrumptious Breakfast Casserole

I used to love spending the night at my Aunt Judy’s house. She always had the best toys, newest movies, and we would always get to go out for pizza if we spent the night. She had a couple of kids that were close in age to my sister and I, so we would go over there as much as she would allow us, which was pretty often. We loved going out for pizza, but I loved the breakfast she made even more. She would make a breakfast casserole just like this one from The Girl Who Ate Everything almost every time. It was so yummy.

My mom hardly ever made casseroles like this, just because she didn’t have the time. Now that I am the Aunt, I like to make them for my nieces and nephews when they come and stay with me. I try to keep the best toys and such on hand for them, but if I can’t do that, at least I can make them a tasty casserole.

My husband requests that I make this for him all the time when we are home. I can’t do it every day, but we do have it quite a bit. It’s versatile so it can be switched up quite a bit for a different taste each time you make it. We never get bored of it I know that much!
