My husband and I started off with no money and lots of love. We didn’t have a dollar in our checking account most of the time, but we did have each other and that’s all that mattered. I often went to my mom’s house to see if she could teach me any recipes that were reasonable in price, but big on flavor. My husband worked, I took care of the kids and the house, so I figured that it was the least that I could do. She showed me a recipe a lot like this one from Recipe Lion for a casserole.
The thing that I realized first and foremost was that Mom just grabbed a bunch of stuff out of her kitchen and tossed it together in the casserole dish. She kept saying, “If you don’t have this, than you can use that…” I was of course writing all of that down.
I made this for the kids and my husband that next day after doing the grocery shopping. It was a huge hit! Even our then picky three-year-old really enjoyed this, and he never liked anything. Now, ten years later, I am still making this regularly.
