If there is one food that I could eat everyday it would be potatoes. I can cook potatoes in a billion different ways. Potato salad, baked potatoes, mashed potatoes with garlic, cheesy potatoes, potato pancakes, potatoes au gratin, twice baked potatoes, hash browns….and the list goes on! Wow, I feel like that scene in Forest Gump because I could list off endless potato dishes and all the ways to cook them!
I used to be a little weird about meat. I’m actually very picky when it comes to the types of meat that I pick. One day I was thinking to myself, what kind of food could I eat? Potatoes were just that. I feel so satiated and full from them. You can add a little bit of this and that and make the potato dish an entire meal. Well, this loaded potato casserole is just that type of meal. You will feel full and happy after eating this wonderful casserole!
Let’s face it, casseroles make our lives so much easier. This casserole is super easy to make and even easier to eat. My entire family loves to gobble this casserole up. I purposely try to make lots of this casserole so that I can have leftovers for the next day. Just so you know, this casserole tastes even better the next day. It’s easy to heat up a piece and have a quick lunch. My kids love to eat these leftovers on the weekend.
