I have never been a huge fan of casseroles. I just don’t like all of my foods mixed together like that in one pan. It honestly kind of grosses me out. Well it did, until I found this enchilada casserole. As soon as I seen it on Spend with Pennies, I just knew that I had to have it in my oven. I already love enchiladas as they are, so this wasn’t going to be any different I was certain. I had some of the ingredients, but had to stop and get the rest after work that day. It was a pretty cheap grocery list which is always nice.
I got home from work and saw that my kids had soccer practice in an hour and a half. So, like usual, I’m rushing around the kitchen trying to get dinner ready before we go. Thank goodness this went together super simple. It’s a casserole too, so it doesn’t have to be perfect looking by any means.
The family looked a little unsure of the whole thing when I set it out to eat, but I was positive it was going to be delicious. It was even better than what I had imagined. Everyone at the table finished their first piece and went back for more!
