My Aunt Sandy always made the best ambrosia salad. She, along with the rest of the family, didn’t understand my love for the dessert at such a young age. They though it to be more of a grown up snack, but I couldn’t get enough. Whenever she would bring it to an event, I followed her around like a lost little puppy until she would sneak me a little bowl. I think I started eating it before I even had teeth, sampling from my mom’s plate.
She didn’t know what she was starting there did she! I guess it could have been worse. I could have been running around begging for candy and chocolate. When I got older, I wanted to do my own take on her yummy recipe, and I thought making it into a pie would be fantastic!
Graham cracker pie crusts are so simple and tasty, why couldn’t I fill it with ambrosia? That’s just what I did. The final result was a lot like this recipe from Spend with Pennies. The people that saw me carrying it into our picnic couldn’t stop starring at it. I told them to just try some. The pan was emptied out in a matter of a few minutes… that’s just how good it is.
