Picnics, summer BBQs, family reunions, weddings, graduation parties… and everything else that you can think of that involves a meal always has one thing that’s a guarantee… tuna macaroni salad! I don’t think I have ever been to one of these events where there hasn’t been that dish on the table somewhere. I love the stuff usually, (even though I have had some bad ones) so it’s a good thing for me. I have never perfected my own recipe, so last year, I thought it was time.
I started in the kitchen trying to come up with my own masterpiece, but it never seemed to turn out quite how I wanted it. I knew I wanted pickles in it, because of my unnatural love for the food. So, I did what everyone does these days, fired up the computer.
Spend with Pennies listed a “pickled” tuna macaroni salad, so I started reading. It sounded about right, so I made it that way once. I will never make it another way again I can tell you that! The flavor was just what I wanted. Now I take it with me to every potluck I go to. It beats out the other salads hands down.
