There is absolutely nothing in the world more comforting than walking into the house to smell a nice hot soup cooking away. Not that I ever did that, but it was something that I remember my mom doing all the time. She was the best cook. She always would come up with delicious dishes for me and the rest of my brothers and sisters. It seemed like the older I got, the more she came up with. I think she just started making more “grown up” type things knowing that we would finally eat them.
When she made potato soup… heaven. We were always fighting over it. It was so yummy and filling. I always wondered why she didn’t make it every day! It was a lot of work though the way she did it. It seemed like she was in the kitchen for hours making it.
So, when I found this super easy recipe for potato soup on Spend with Pennies, I just had to make it. I wanted to know how hard it really was. This kind, not hard at all! I made it up real quick and got to walk into my very own house to that wonderful smell for once!
