Banana Rama Cake, Anyone?

Every month, we have a Visit the Grandparents weekend. Usually, during the last weekend of the month, we will go on a road trip with the kids to visit their grandparents on either side. We do this alternately. We want our kids to grow up familiar with their grandparents. My only regret in life was not being able to spend a lot of time with my paternal grandparents because they lived far. Grandparents are a huge part of a child’s life so we want our kids to know that fact.

Last month, it was my parents’ turn. Usually, I bring homemade dessert for them even though I know that Mom can outbake me anytime. However, my desserts always have a purpose; and it has something to do with their health.

Mom has developed cramps recently. Dad cannot leave her alone for a long time because when her cramps attack, it will be quite a difficult situation. The doctor said that she shouldn’t force herself too much and that she should eat a lot of bananas.

Bananas are rich in potassium, which is apparently what my Mom needs to counter her cramps. The doctor advised her to eat at least one per meal because that’s what her body needs. Mom is not too fond of bananas- she loves oranges and will never exchange them with anything.

Whenever I go there, I make sure I bring something banana-ish. And since my Mom loves dessert, she can never say no to anything even if it’s made with banana. I always top my banana desserts with nuts and more bananas for her sake.
