I have a cousin who lives in Italy with her family. She was petitioned when she was still in her twenties. She worked odd jobs here and there because it wasn’t easy to find a regular job when you just landed in the country. it’s not just in Italy. We all know that unless you were hired in the country where you’re from, it would be difficult for you to search for a local job. But my cousin was persistent and finally landed a job as a caretaker of a house. It’s where she met her now-husband of ten years.
My cousin and I always talked using social networking accounts-one advantage of technology. Before, you had to place long distance phone calls to be able to reach someone. But now, all you have to do is log in to your account and you can dial for free as long as you have internet connection.
Last time that we talked, she asked me what I would like as a souvenir. She would be visiting with her family in a month. I did not even hesitate: “Fresh mozzarella, please!”
I tasted fresh mozzarella from Italy when she came home last time (I know we have it here in the grocery, but it really tastes different!) and it was so delicious! I told myself that when she came home again, I would ask for it. The fresh mozzarella is really good in pasta and casseroles.
Just like this chicken parmesan casserole. It’s already amazing in the first place, but those pieces of fresh mozzarella on top just made this more delicious.
