I can’t wait for fall because of two reasons: one, I’m finally going to have a few days off. Two, we’re going on vacation to one of my favorite places in the world, Greece. I am quite excited now because in a few weeks, I will be dining in these small, family-owned restaurants with incredible food and great service. My husband was able to secure a two-week leave from his work and I’m pretty sure I will gain about 20 pounds during that time.
To me, traveling is first and foremost about food. I think you can learn a lot about another culture just by watching them prepare and eat meals. In Greece the whole family usually gathers together to make dinner.
Speaking of Mediterranean flavors, I made this roast a couple of nights ago for supper. It’s a flavorful roast with the taste of Mediterranean on it-savory, succulent, and tender. While it’s a simple beef roast, the flavors made me feel like I was already on vacation!
The meat is tender, succulent; and absorbs all the wonderful seasonings. One bite and you’ll know you have a winner recipe in your hands. It’s beef roast at its finest.
