Slow days mean a lot to me. During these days, I usually don’t have a lot to do because my job requires me to wait over the results before I can begin again. I can do a lot of things during these days. I can sneak in a bit of cleaning, washing, and cooking. I love it when I have a bit of time to do other things I am not able to do whenever I am busy attending to my work.
Usually, I start with the washing of the clothes. And then I will proceed to do a bit of cleaning in the house. Dust accumulates in those regions you don’t often see.
The last thing I will do is food. I set aside the hard tasks first so I can concentrate on making food for my family. During this time, my sons usually accompany me in the kitchen. They will just sit there with their toys or with their art materials.
It’s hitting two birds with one stone- I can watch over my sons while preparing a really nice food for them. My choice for weeknights are always casseroles. They’re easy to make so I still have time to prepare a simple dessert.
That night we enjoyed a creamy pasta bake with chicken and spinach on it. Usually, I accompany my dish with something chocolaty and creamy like a simple chocolate mousse; so we enjoyed that as well. How about you, what do you usually pair with your pasta bake?

Quick Tip: if you prefer it, you can saute the onions in the pan with the chicken to give the chicken a bit more flavor.
